Creamy Tuscan Salmon

Main Ingredients
  • 4 salmon fillets skin-on or skinless
  • 1 tbsp olive oil
  • 1 tbsp butter
  • 3 cloves garlic minced
  • 0.5 cup sun-dried tomatoes chopped
  • 1 cup heavy cream
  • 0.5 cup chicken broth
  • 0.5 cup Parmesan cheese grated
  • 1 tsp Italian seasoning
  • 1 tsp paprika
  • 2 cups spinach fresh
  • salt and pepper to taste

Method
 

  1. Season salmon with salt, pepper, and paprika.
  2. Heat olive oil and butter in a skillet over medium-high heat.
  3. Sear salmon 3–4 minutes per side until golden, then remove from skillet.
  4. Lower heat and sauté garlic for 30 seconds.
  5. Add sun-dried tomatoes and cook 1 minute.
  6. Pour in heavy cream and chicken broth; stir well.
  7. Add Parmesan and Italian seasoning; simmer to thicken.
  8. Stir in spinach until wilted.
  9. Return salmon to skillet and spoon sauce over the top.
  10. Simmer 2–3 minutes until salmon is fully cooked.

Notes

Add lemon juice for brightness or mushrooms for extra depth.
