  • 2 tbsp olive oil
  • 1 onion chopped
  • 2 carrots diced
  • 2 stalks celery diced
  • 3 cloves garlic minced
  • 1.5 lb potatoes peeled and diced
  • 4 cups vegetable broth
  • 1 bay leaf
  • 1 tsp dried marjoram
  • 1 tbsp mustard Dijon or German-style
  • 0.5 cup plant-based cream

Method
 

  1. Sauté vegetables in olive oil until softened.
  2. Add potatoes, broth, and seasonings; simmer until tender.
  3. Blend partially for a creamy texture.
