Ingredients
  

Chicken
  • 4 boneless skinless chicken breasts 6-8 oz each
  • 1 cup all-purpose flour
  • 2 large eggs beaten
  • 2 cups panko breadcrumbs
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1 tsp dried oregano
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 0.25 tsp cayenne pepper optional
  • cooking spray
For Serving
  • lemon wedges
  • fresh parsley for garnish

Equipment

  • Air fryer
  • Meat mallet
  • Three shallow dishes
  • Meat thermometer

Method
 

  1. Prepare chicken breasts by pounding to even 3/4-inch thickness between plastic wrap.
  2. Set up breading station with flour, beaten eggs, and seasoned breadcrumbs in separate dishes.
  3. Preheat air fryer to 375°F (190°C) for 3-5 minutes.
  4. Bread each chicken breast by dredging in flour, then egg, then breadcrumbs, pressing to adhere.
  5. Spray air fryer basket and arrange chicken in single layer without overlapping.
  6. Spray tops of breaded chicken with cooking spray for even browning.
  7. Cook for 6 minutes, then flip and spray exposed side with cooking spray.
  8. Continue cooking 6-9 minutes until internal temperature reaches 165°F (74°C).
  9. Rest chicken 3-5 minutes before serving to redistribute juices.
  10. Garnish with fresh parsley and serve with lemon wedges.

Notes

For best results, don't overcrowd the air fryer basket. Cook in batches if necessary. Store leftovers in refrigerator up to 3 days and reheat in air fryer to restore crispiness.
