- Preheat oven to 425°F (220°C) and position rack in upper third of oven.
- Pound chicken breasts to 3/4 inch thickness between plastic wrap.
- Set up breading station: seasoned flour, beaten eggs, and panko mixed with Parmesan and seasonings.
- Season chicken with salt and pepper, then bread each piece through flour, egg, and panko mixture.
- Place breaded chicken on wire rack over baking sheet, drizzle with olive oil.
- Bake for 20 minutes until golden brown and internal temperature reaches 165°F.
- Top each chicken breast with marinara sauce and mozzarella cheese.
- Return to oven for 10-15 minutes until cheese is melted and bubbly.
- Rest for 5 minutes, garnish with basil, and serve immediately.
Notes
For extra crispiness, let breaded chicken rest 10-15 minutes before baking. Can be served over pasta or with salad.
