Ingredients
  

Chicken
  • 4 boneless skinless chicken breasts 6-8 oz each
  • 2 cups panko breadcrumbs
  • 1 cup all-purpose flour
  • 3 large eggs beaten
  • 1 cup Parmesan cheese grated
  • 2 tsp Italian seasoning
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp dried oregano
  • 2 tbsp olive oil
Toppings
  • 2 cups marinara sauce
  • 2 cups mozzarella cheese shredded
  • fresh basil for garnish
  • salt and pepper to taste

Equipment

  • Baking sheet
  • Wire rack
  • Meat mallet
  • Shallow dishes for breading

Method
 

  1. Preheat oven to 425°F (220°C) and position rack in upper third of oven.
  2. Pound chicken breasts to 3/4 inch thickness between plastic wrap.
  3. Set up breading station: seasoned flour, beaten eggs, and panko mixed with Parmesan and seasonings.
  4. Season chicken with salt and pepper, then bread each piece through flour, egg, and panko mixture.
  5. Place breaded chicken on wire rack over baking sheet, drizzle with olive oil.
  6. Bake for 20 minutes until golden brown and internal temperature reaches 165°F.
  7. Top each chicken breast with marinara sauce and mozzarella cheese.
  8. Return to oven for 10-15 minutes until cheese is melted and bubbly.
  9. Rest for 5 minutes, garnish with basil, and serve immediately.

Notes

For extra crispiness, let breaded chicken rest 10-15 minutes before baking. Can be served over pasta or with salad.
