Ingredients
  

Wings
  • 2 lb chicken wings split into flats and drumettes
  • 1 tbsp baking powder aluminum-free
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp paprika smoked or regular
  • 0.5 tsp onion powder
  • 2 tbsp olive oil
Optional Sauce
  • 0.25 cup hot sauce or BBQ sauce for tossing
  • 1 tbsp unsalted butter melted, for sauce

Method
 

  1. Preheat oven to 425°F (220°C). Line a baking sheet with foil and place a wire rack on top. Spray lightly with oil.
  2. Pat wings completely dry with paper towels.
  3. Mix baking powder, salt, pepper, garlic powder, paprika, and onion powder in a bowl.
  4. Add wings and olive oil. Toss until evenly coated.
  5. Arrange wings on the rack in a single layer, leaving space between them.
  6. Bake on lower rack for 30 minutes, then flip and bake on upper rack for another 25 minutes or until crispy and golden.
  7. Optional: Toss in melted butter and hot sauce or BBQ sauce before serving.
  8. Serve hot with dipping sauces and garnish with parsley.

Notes

For extra crispiness, refrigerate seasoned wings uncovered for 8 hours before baking.
