Method
- Soak cube steaks in buttermilk for at least 1 hour or overnight.
- Mix flour, baking powder, salt, and spices in one bowl; whisk eggs and milk in another.
- Dredge steaks in flour, then egg mixture, then back in flour. Let rest 10 minutes.
- Heat oil in skillet to 350°F and fry steaks 3–4 minutes per side until golden.
- Make gravy by whisking flour into drippings, then slowly adding milk and cream.
- Season gravy with salt and pepper, then serve over crispy steaks.
Notes
Serve hot with mashed potatoes and biscuits. Adjust gravy consistency with extra milk if needed.
