Ingredients
  

Chicken
  • 2 lbs chicken breasts sliced into cutlets
  • 1 cup dill pickle juice
Breading
  • 2 eggs beaten
  • 1 cup Parmesan cheese grated
  • 1 cup panko breadcrumbs
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 0.5 tsp smoked paprika
  • 0.5 tsp dried dill
  • 0.5 tsp black pepper

Method
 

  1. Marinate chicken in pickle juice for 30 minutes.
  2. Preheat oven to 425°F and prepare baking sheet.
  3. Mix Parmesan, breadcrumbs, and seasonings.
  4. Dip chicken in egg, then coat in breadcrumb mixture.
  5. Bake 18–22 minutes, flipping halfway, until golden and cooked through.

Notes

For extra crispiness, spray chicken lightly with oil before baking.
