Ingredients
  

Fried Zucchini
  • 2 zucchini sliced into 1/4-inch rounds
  • 1 cup flour
  • 2 eggs beaten
  • 1.5 cups panko breadcrumbs
  • 0.5 cup parmesan grated
  • 0.5 tsp garlic powder
  • 0.5 tsp paprika
  • 0.5 tsp salt
  • 0.5 tsp black pepper
  • oil for frying
Garlic Aioli
  • 0.5 cup mayonnaise
  • 1 tbsp lemon juice
  • 2 cloves garlic minced
  • 0.25 tsp salt
  • 0.25 tsp black pepper
  • 1 tsp olive oil

Equipment

Method
 

  1. Mix mayonnaise, lemon juice, garlic, salt, pepper, and olive oil to make garlic aioli. Refrigerate.
  2. Prepare breading station with flour, eggs, and breadcrumb mixture.
  3. Dredge zucchini slices in flour, dip in egg, and coat in breadcrumbs.
  4. Heat oil in skillet over medium heat.
  5. Fry zucchini slices 2–3 minutes per side until golden.
  6. Drain on paper towels and serve with garlic aioli.

Notes

Serve immediately for maximum crispiness. Air fryer version cooks at 400°F for 8–10 minutes.
