  • 1 lb potato gnocchi shelf-stable or refrigerated
  • 2 tbsp olive oil
  • 2 cloves garlic minced
  • 3 cups baby spinach
  • 0.5 tsp salt to taste
  • 0.25 tsp black pepper
  • 0.25 tsp crushed red pepper flakes optional
  • 0.5 cup feta cheese crumbled
  • 0.5 lemon zested and juiced

Method
 

  1. Heat olive oil in a large nonstick skillet over medium-high heat.
  2. Add gnocchi in a single layer and cook for 8–10 minutes until golden and crisp, tossing occasionally.
  3. Remove gnocchi and set aside. Add garlic to the pan and sauté for 30 seconds.
  4. Add spinach and cook until just wilted, about 1–2 minutes. Season with salt, pepper, and red pepper flakes.
  5. Return gnocchi to the pan and toss with spinach. Add lemon zest and juice, then sprinkle feta on top.
  6. Stir gently until feta softens slightly and everything is heated through. Serve immediately.

Notes

For extra richness, add a tablespoon of butter or cream at the end. Great with sun-dried tomatoes or fresh basil.
