  • 1 lb potato gnocchi shelf-stable
  • 2 tbsp olive oil
  • 3 cloves garlic minced
  • 4 cups fresh spinach
  • 0.5 cup feta cheese crumbled
  • 1 lemon zested and juiced
  • 0.25 tsp red pepper flakes optional
  • salt to taste
  • black pepper to taste

Method
 

  1. Heat olive oil in a large skillet over medium heat.
  2. Add gnocchi in a single layer and cook undisturbed for 3–4 minutes until golden.
  3. Flip and cook another 4–5 minutes until crispy on multiple sides.
  4. Add minced garlic and sauté 30 seconds until fragrant.
  5. Add spinach and cook until wilted.
  6. Season with salt, pepper, red pepper flakes, lemon zest, and lemon juice.
  7. Remove from heat and sprinkle with crumbled feta before serving.

Notes

Avoid overcrowding the pan to ensure crispiness. Serve immediately for best texture.
