Ingredients
  

Chicken
  • 1 lb chicken tenderloins
  • 1 cup gluten-free breadcrumbs or almond flour
  • 1 tsp turmeric powder
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 0.5 tsp onion powder
  • 0.5 tsp salt
  • 0.5 tsp black pepper
  • 2 eggs
  • 2 tbsp olive oil

Method
 

  1. Preheat oven to 400°F and line a baking sheet with parchment paper.
  2. Mix breadcrumbs, turmeric, garlic powder, paprika, onion powder, salt, and pepper in a bowl.
  3. Whisk eggs with olive oil in another bowl.
  4. Dip chicken in egg mixture then coat with breadcrumb mixture.
  5. Place coated tenders on baking sheet and lightly spray with oil.
  6. Bake 18–22 minutes flipping halfway until golden and cooked through.

Notes

Serve with yogurt garlic dip or honey mustard. For extra crunch use crushed gluten-free cornflakes.
