Ingredients
  

  • 3-4 lb chuck roast
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 2 tbsp olive oil
  • 1 large onion sliced
  • 4 cloves garlic minced
  • 4 carrots chunked
  • 1.5 lb potatoes halved
  • 2 cups beef broth
  • 2 tbsp Worcestershire sauce
  • 2 tbsp tomato paste

Equipment

  • Crock pot or slow cooker
  • Large skillet
  • Knife
  • Cutting board

Method
 

  1. Season chuck roast generously on all sides.
  2. Sear roast in hot skillet until browned.
  3. Place vegetables in crock pot and top with roast.
  4. Pour broth mixture over roast.
  5. Cook on low 8–9 hours or high 4–5 hours.
  6. Thicken gravy if desired and serve.

Notes

For best results, cook low and slow.
