Method
- Add all ingredients except pasta and greens to the slow cooker and stir to combine.
- Cover and cook on LOW for 6–8 hours or HIGH for 3–4 hours until vegetables are tender.
- Add pasta 30 minutes before serving and cook until al dente.
- Stir in spinach or kale just before serving.
- Remove bay leaf, season with salt and pepper, and serve hot with Parmesan cheese.
Notes
Cook pasta separately if you plan to freeze leftovers to prevent it from getting mushy.
