Crock Pot Minestrone Soup

Ingredients
  

Soup Base
  • 2 tbsp olive oil
  • 1 onion diced
  • 2 cloves garlic minced
  • 2 carrots sliced
  • 2 stalks celery chopped
  • 1 zucchini diced
  • 1 can diced tomatoes 15 oz
  • 1 can kidney beans drained and rinsed
  • 1 can cannellini beans drained and rinsed
  • 4 cups vegetable broth
  • 1 cup small pasta like ditalini or elbow
  • 1 cup spinach or kale chopped
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • 0.5 tsp dried thyme
  • 1 bay leaf
  • 0.25 tsp red pepper flakes optional
  • salt and pepper to taste

Equipment

  • Slow cooker
  • Cutting board
  • Knife
  • Ladle

Method
 

  1. Add all ingredients except pasta and greens to the slow cooker and stir to combine.
  2. Cover and cook on LOW for 6–8 hours or HIGH for 3–4 hours until vegetables are tender.
  3. Add pasta 30 minutes before serving and cook until al dente.
  4. Stir in spinach or kale just before serving.
  5. Remove bay leaf, season with salt and pepper, and serve hot with Parmesan cheese.

Notes

Cook pasta separately if you plan to freeze leftovers to prevent it from getting mushy.
