Ingredients
  

Soup Base
  • 1 lb Italian sausage mild or hot
  • 4 cups chicken broth
  • 4 cups potatoes diced
  • 1 onion chopped
  • 3 cloves garlic minced
  • 1 tsp salt
  • 0.5 tsp black pepper
Finishing Ingredients
  • 1 cup heavy cream
  • 3 cups kale chopped
  • 0.5 cup parmesan grated

Method
 

  1. Brown the sausage until cooked through, if desired.
  2. Add sausage, potatoes, onion, garlic, broth, salt, and pepper to the Crock-Pot.
  3. Cook on LOW for 6–7 hours or HIGH for 3–4 hours.
  4. Stir in the kale and heavy cream.
  5. Cook an additional 10–15 minutes.
  6. Serve warm with parmesan.

Notes

For a thicker broth, mash a few cooked potatoes into the soup before adding the cream.
