Method
- Toss beef in flour and sear in olive oil until browned.
- Transfer beef to crockpot.
- Add potatoes, carrots, celery, onion, and garlic.
- Whisk broth, tomato paste, Worcestershire, and seasonings; pour into crockpot.
- Cook on LOW for 7–8 hours or HIGH for 4–5 hours.
- Mash some potatoes or add a flour slurry for thicker stew if desired.
- Serve hot and garnish with parsley.
Notes
Add peas during the last 10 minutes of cooking for color and sweetness.
