Ingredients
  

Chicken
  • 2 lbs chicken breasts boneless skinless
Butternut Squash
  • 4 cups butternut squash cubes fresh or pre-cut
Maple Dijon Sauce
  • 0.5 cup maple syrup pure
  • 0.33 cup dijon mustard
  • 3 garlic cloves minced
  • 0.75 cup chicken broth
  • 1 tsp salt
  • 0.5 tsp black pepper

Method
 

  1. Place chicken breasts at the bottom of the slow cooker.
  2. Add the butternut squash cubes on top and around the chicken.
  3. In a bowl, whisk together maple syrup, dijon mustard, garlic, broth, salt, and pepper.
  4. Pour the sauce over the chicken and squash, coating everything evenly.
  5. Cook on LOW for 6–7 hours or HIGH for 3–4 hours.
  6. Optional: Mash a bit of squash into the sauce to thicken.
  7. Serve warm with extra sauce spooned over the top.

Notes

For extra depth, add fresh rosemary or thyme during the last hour of cooking.
