Ingredients
  

Sweet Potato Mixture
  • 4 large sweet potatoes peeled and cubed
  • 0.5 cup unsalted butter melted
  • 0.5 cup brown sugar packed
  • 0.25 cup maple syrup or honey
  • 1 tsp cinnamon
  • 0.25 tsp nutmeg
  • 1 tsp vanilla extract
  • 0.25 tsp salt
  • 1 cup mini marshmallows for mixing (optional)
Topping
  • 2 cups mini marshmallows for topping
  • 0.5 cup pecans chopped (optional)

Method
 

  1. Peel and cube sweet potatoes into 1-inch pieces; place them in the crockpot.
  2. Whisk melted butter, brown sugar, maple syrup, cinnamon, nutmeg, vanilla, and salt in a bowl.
  3. Pour mixture over sweet potatoes and stir gently to coat.
  4. Cover and cook on LOW for 5–6 hours or HIGH for 3–4 hours until tender.
  5. Optional: Stir in 1 cup mini marshmallows during the last 15 minutes for extra creaminess.
  6. Top with remaining marshmallows; cover and let them melt for 10–15 minutes.
  7. Optional: Broil for 1–2 minutes for toasted marshmallow topping.
  8. Serve warm and enjoy.
