- Peel and cube sweet potatoes into 1-inch pieces; place them in the crockpot.
- Whisk melted butter, brown sugar, maple syrup, cinnamon, nutmeg, vanilla, and salt in a bowl.
- Pour mixture over sweet potatoes and stir gently to coat.
- Cover and cook on LOW for 5–6 hours or HIGH for 3–4 hours until tender.
- Optional: Stir in 1 cup mini marshmallows during the last 15 minutes for extra creaminess.
- Top with remaining marshmallows; cover and let them melt for 10–15 minutes.
- Optional: Broil for 1–2 minutes for toasted marshmallow topping.
- Serve warm and enjoy.
