Ingredients
  

Sweet Potatoes
  • 4 sweet potatoes peeled and chopped
Flavor Mix
  • 3 tbsp butter
  • 0.25 cup brown sugar or maple syrup
  • 1 tsp cinnamon
  • 1 tsp vanilla extract
  • 0.25 tsp salt
Topping
  • 2-3 cups mini marshmallows

Equipment

  • Crockpot
  • Peeler
  • Potato masher
  • Mixing spoon

Method
 

  1. Peel and chop sweet potatoes into chunks.
  2. Add sweet potatoes, butter, brown sugar, cinnamon, vanilla, and salt to the crockpot.
  3. Cook on HIGH for 3–4 hours or LOW for 6–7 hours until tender.
  4. Mash or stir sweet potatoes to desired texture.
  5. Top with mini marshmallows.
  6. Cover and cook for 5–10 minutes until marshmallows melt.
  7. Serve warm.

Notes

For toasted marshmallows, broil in the oven for 1–2 minutes after slow cooking.
