Ingredients
  

Salad Ingredients
  • 2 cups shredded cooked chicken
  • 2 cups shredded red cabbage
  • 2 cups shredded green cabbage
  • 1 cup shredded carrots
  • 1 red bell pepper thinly sliced
  • 0.5 cup cilantro chopped
  • 0.25 cup green onions sliced
  • 0.5 cup roasted peanuts
Peanut Dressing
  • 0.25 cup creamy peanut butter
  • 2 tbsp soy sauce
  • 2 tbsp rice vinegar
  • 1 tbsp lime juice
  • 1 tbsp honey
  • 1 tsp sesame oil
  • 1 clove garlic minced
  • 1 tsp fresh ginger grated
  • 2-4 tbsp water to thin dressing

Method
 

  1. Prepare all vegetables by finely slicing cabbage, bell pepper, carrots, cilantro, and green onions.
  2. Add shredded chicken to a large mixing bowl with the chopped vegetables.
  3. In a separate bowl, whisk peanut butter, soy sauce, rice vinegar, lime juice, honey, sesame oil, garlic, and ginger.
  4. Add water 1 tablespoon at a time until dressing is smooth and pourable.
  5. Pour dressing over the salad ingredients and toss until evenly coated.
  6. Top with roasted peanuts and serve with lime wedges.

Notes

Add water slowly to adjust dressing consistency.
