Ingredients
  

Salad Ingredients
  • 2 large cucumbers sliced or diced
  • 2 ripe avocados diced
  • 0.25 cup red onion thinly sliced
  • 0.25 cup fresh cilantro or parsley chopped
Dressing
  • 1-2 limes, juiced
  • 2 tbsp olive oil
  • to taste salt
  • to taste black pepper

Method
 

  1. Slice cucumbers into rounds or cubes and add them to a mixing bowl.
  2. Dice the avocados and add them to the bowl with the cucumber.
  3. Add thinly sliced red onion and chopped herbs.
  4. In a separate bowl, whisk together lime juice, olive oil, salt, and pepper.
  5. Pour the dressing over the salad and gently toss to coat.
  6. Taste and adjust seasoning before serving fresh.

Notes

Best served immediately to maintain texture. Add herbs or spices for variation.
