Ingredients
  

Salad
  • 2 large cucumbers sliced
  • 1 cup mozzarella pearls
  • 1 cup cherry tomatoes halved
  • 0.25 red onion thinly sliced
Dressing
  • 3 tbsp olive oil
  • 1 tbsp red wine vinegar

Equipment

Method
 

  1. Slice cucumbers and tomatoes, and thinly slice onion.
  2. Combine vegetables and mozzarella in a mixing bowl.
  3. Whisk olive oil and vinegar, then pour over salad.
  4. Toss gently, add basil, and serve.

Notes

Add basil just before serving for best color and freshness.
