Ingredients
  

Banana Jam
  • 3 cups ripe bananas mashed
  • 1 cup dark brown sugar packed
  • 1/4 cup dark rum
  • 2 tbsp lemon juice fresh
  • 1 tsp vanilla extract
  • 1/2 tsp cinnamon optional
  • pinch salt

Method
 

  1. Peel and mash bananas in a medium bowl, leaving some chunks for texture.
  2. In a saucepan, combine bananas, brown sugar, lemon juice, vanilla, cinnamon, and salt.
  3. Cook over medium heat until mixture bubbles gently, then reduce to low and simmer 25–30 minutes.
  4. Stir in dark rum and cook an additional 5 minutes.
  5. Test consistency on a chilled plate; simmer longer if needed.
  6. Cool slightly and transfer to sterilized jars. Store in the refrigerator up to 2 weeks.

Notes

Optional: add nutmeg or cloves for holiday variations. Freeze in portions for longer storage.
