Method
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Boil peeled and cut potatoes in salted water until tender, about 15–20 minutes.
- Drain well, return to pot, and mash until smooth.
- Add butter, cream, egg yolks, salt, pepper, and nutmeg. Stir until smooth and creamy.
- Transfer mixture to a piping bag fitted with a large star tip.
- Pipe swirls onto the prepared baking sheet.
- Brush lightly with melted butter and bake for 18–22 minutes until golden brown.
Notes
Pipe potatoes while warm for best texture. Can be frozen unbaked for later use.
