Ingredients
  

Duchess Potatoes
  • 2 lbs russet potatoes peeled and cut into chunks
  • 4 tbsp unsalted butter
  • 0.25 cup heavy cream
  • 3 egg yolks
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 0.5 tsp nutmeg optional

  • Piping bag with star tip

Method
 

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Boil peeled and cut potatoes in salted water until tender, about 15–20 minutes.
  3. Drain well, return to pot, and mash until smooth.
  4. Add butter, cream, egg yolks, salt, pepper, and nutmeg. Stir until smooth and creamy.
  5. Transfer mixture to a piping bag fitted with a large star tip.
  6. Pipe swirls onto the prepared baking sheet.
  7. Brush lightly with melted butter and bake for 18–22 minutes until golden brown.

Notes

Pipe potatoes while warm for best texture. Can be frozen unbaked for later use.
