Ingredients
  

Pork Loin
  • 3 lb pork loin
  • 2 tbsp olive oil
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 onion sliced
  • 3 cloves garlic smashed
  • 1.5 cups broth
  • 2 sprigs fresh herbs rosemary or thyme

Method
 

  1. Preheat oven to 325°F (165°C).
  2. Season pork loin generously with salt and pepper.
  3. Heat oil in a Dutch oven and sear pork on all sides until golden.
  4. Remove pork and sauté onion and garlic until fragrant.
  5. Deglaze the pot with broth, scraping up browned bits.
  6. Return pork to the Dutch oven and add herbs.
  7. Cover and roast for 55–60 minutes until tender.
  8. Rest pork 10 minutes before slicing.
