Method
- Preheat oven to 325°F (165°C).
- Season pork loin generously with salt and pepper.
- Heat oil in a Dutch oven and sear pork on all sides until golden.
- Remove pork and sauté onion and garlic until fragrant.
- Deglaze the pot with broth, scraping up browned bits.
- Return pork to the Dutch oven and add herbs.
- Cover and roast for 55–60 minutes until tender.
- Rest pork 10 minutes before slicing.
