Ingredients
  

  • 4 boneless skinless chicken breasts
  • 0.33 cup honey
  • 0.25 cup dijon mustard
  • 2 tbsp olive oil
  • 3 cloves garlic minced
  • 1 tsp dried parsley
  • 0.5 tsp dried oregano
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 0.25 tsp red pepper flakes optional
  • fresh broccoli florets for serving

Method
 

  1. Preheat oven to 375°F and lightly grease a baking dish with cooking spray or olive oil.
  2. Pat chicken breasts dry with paper towels and arrange in a single layer in the prepared baking dish.
  3. In a medium bowl, whisk together honey, dijon mustard, olive oil, minced garlic, parsley, oregano, salt, black pepper, and red pepper flakes until smooth.
  4. Pour the honey dijon mixture over chicken breasts, coating each piece generously on all sides.
  5. Bake for 25-30 minutes, basting chicken with pan juices halfway through cooking.
  6. Check internal temperature with an instant-read thermometer – chicken should reach 165°F in the thickest part.
  7. Remove from oven and let rest for 5 minutes before serving.
  8. Serve with steamed or roasted broccoli and drizzle remaining pan sauce over chicken.

Notes

For extra caramelization, broil for 2-3 minutes at the end of cooking. Store leftovers in an airtight container in the refrigerator for up to 4 days.
