A simplified version of the classic Beef Wellington with tender beef, mushroom duxelles, prosciutto, and flaky puff pastry.

Ingredients
  

  • 2 lb beef tenderloin center-cut
  • 1.5 tsp salt
  • 1 tsp black pepper
  • 2 tbsp olive oil
  • 12 oz mushrooms finely chopped
  • 1 shallot minced
  • 2 cloves garlic minced
  • 1 tbsp fresh thyme chopped
  • 2 tbsp Dijon mustard
  • 8 slices prosciutto
  • 1 sheet puff pastry thawed
  • 1 egg beaten

Method
 

  1. Season and sear beef on all sides; let cool.
  2. Cook mushrooms, shallot, and garlic until dry.
  3. Brush beef with Dijon mustard.
  4. Wrap beef with prosciutto and mushroom mixture.
  5. Chill wrapped beef for 15–20 minutes.
  6. Wrap in puff pastry and seal edges.
  7. Brush pastry with egg wash.
  8. Bake at 400°F until golden and cooked.
  9. Rest before slicing and serving.

Notes

Use a thermometer for best doneness.
