Ingredients
  

Chicken
  • 2 lbs boneless skinless chicken breasts
  • 16 oz jar salsa
  • 1 packet taco seasoning
  • 4 oz cream cheese optional, for creamy version
  • 0.25 cup chicken broth optional, for lighter version
  • fresh cilantro or lime for garnish

Method
 

  1. Place chicken breasts in the crockpot.
  2. Sprinkle taco seasoning over the chicken.
  3. Pour salsa over the top, spreading to coat.
  4. Add cream cheese or chicken broth if using.
  5. Cover and cook on LOW for 5–6 hours or HIGH for 2–3 hours.
  6. Shred chicken directly in the crockpot using two forks.
  7. Stir to combine so chicken absorbs the salsa.
  8. Serve warm in bowls, tacos, rice, or meal prep containers.

Notes

For extra moisture, add 1/4 cup broth. For creamy version, add cream cheese during last hour.
