Ingredients
  

Bread
  • 2 cups all-purpose flour
  • 1 cup sugar
  • 1.5 tsp baking powder
  • 0.5 tsp baking soda
  • 0.5 tsp salt
  • 1 tbsp orange zest
  • 1.5 cups cranberries fresh or frozen
  • 2 eggs large
  • 0.5 cup butter melted
  • 0.75 cup buttermilk
  • 1 tsp vanilla extract
  • 0.33 cup orange juice fresh
Glaze
  • 1 cup powdered sugar
  • 2 tbsp orange juice
  • 0.5 tsp orange zest

Equipment

Method
 

  1. Preheat oven to 350°F (175°C). Line a 9×5 loaf pan.
  2. Whisk flour, sugar, baking powder, baking soda, salt, and orange zest.
  3. Add cranberries and toss to coat.
  4. Mix eggs, melted butter, buttermilk, vanilla, and orange juice in a separate bowl.
  5. Combine wet and dry ingredients and mix gently.
  6. Pour into loaf pan and bake 50–60 minutes.
  7. Whisk glaze ingredients and drizzle over cooled bread.

Notes

Frozen cranberries do not need to be thawed.
