Ingredients
  

  • 1.5 cups long-grain white rice uncooked
  • 3 cups chicken broth
  • 3 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1 cup frozen peas and carrots
  • 3 eggs lightly beaten

Equipment

  • 9x13 inch baking dish
  • Mixing spoon
  • Aluminum foil

Method
 

  1. Combine rice, liquids, and seasonings in baking dish.
  2. Add vegetables and pour eggs over top.
  3. Cover and bake until rice is tender.
  4. Fluff, bake uncovered briefly, and serve.

Notes

Fluff gently to keep rice grains separate.
