Ingredients
  

  • 2 cups filtered water
  • 1 tbsp gluten-free white miso paste
  • 0.5 cup tofu cubed
  • 1 tbsp dried wakame seaweed
  • 1 tbsp green onions sliced

Equipment

  • Saucepan
  • Wooden spoon
  • Small bowl

Method
 

  1. Bring water to a gentle simmer in a saucepan.
  2. Add dried wakame and allow it to rehydrate.
  3. Gently add tofu and warm through.
  4. Dissolve miso paste in a small bowl with hot broth.
  5. Remove soup from heat and stir in dissolved miso.
  6. Garnish with green onions and serve immediately.

Notes

Do not boil after adding miso to preserve flavor and nutrients.
