Ingredients
  

  • 3 cups tomatoes cut into wedges
  • 1.5 cups cucumber sliced
  • 0.25 cup red onion thinly sliced
  • 0.5 cup Kalamata olives
  • 4 oz feta cheese cut into large pieces
  • 3 tbsp extra virgin olive oil
  • 1 tbsp red wine vinegar
  • 1 tsp dried oregano
  • 0.5 tsp salt
  • 0.25 tsp black pepper

Equipment

  • Large bowl

Method
 

  1. Add tomatoes, cucumber, red onion, and olives to a large bowl.
  2. Drizzle with olive oil and red wine vinegar.
  3. Season with oregano, salt, and black pepper.
  4. Top with feta cheese and gently toss or leave layered.
  5. Serve immediately or after resting briefly.

Notes

Best served fresh using ripe tomatoes and quality olive oil.
