  • 4 oz cream cheese softened
  • 2 tbsp powdered erythritol
  • 1 egg large
  • 1 tbsp sour cream
  • 0.5 tsp vanilla extract
  • 0.5 tsp lemon juice optional

Method
 

  1. Add softened cream cheese to a microwave-safe mug.
  2. Mix in powdered sweetener until smooth.
  3. Stir in egg until fully combined.
  4. Add sour cream, vanilla, and lemon juice.
  5. Microwave for 60 seconds.
  6. Microwave in 10–15 second bursts until just set.
  7. Let cool slightly before serving.

Notes

Do not overcook. Cheesecake firms as it cools.
