Ingredients
  

Soup Base
  • 1 cup lentils rinsed
  • 1 onion chopped
  • 2 carrots diced
  • 1 stalk celery chopped
  • 2 cloves garlic minced
  • 4 cups vegetable broth
  • 1 tbsp olive oil
  • 1 tsp ground cumin
  • 1 lemon zest and juice

Equipment

Method
 

  1. Sauté onion, carrots, and celery in olive oil until softened.
  2. Add garlic and spices and cook until fragrant.
  3. Add lentils and vegetable broth and bring to a simmer.
  4. Cook until lentils are tender.
  5. Stir in lemon zest and juice, season, and serve.

Notes

Add lemon juice gradually and adjust to taste for best balance.
