Easy Low Carb Pizza Casserole

Ingredients
  

Casserole Base
  • 1 lb ground beef or chicken/turkey
  • 1 cup low-carb marinara sauce
  • 1 cup mushrooms sliced
  • 1 cup bell pepper chopped
  • 1 small onion diced
  • 2 cloves garlic minced
Toppings
  • 2 cups mozzarella cheese shredded
  • 20-25 slices pepperoni
Seasonings
  • 1 tsp Italian seasoning
  • 0.5 tsp garlic powder
  • 0.5 tsp onion powder
  • 0.25 tsp red pepper flakes optional
  • salt and pepper to taste

Method
 

  1. Preheat oven to 375°F (190°C).
  2. Heat olive oil in a skillet and sauté onions, bell peppers, mushrooms, and garlic until softened.
  3. Add ground beef and cook until browned. Drain excess grease.
  4. Season with Italian seasoning, garlic powder, onion powder, salt, and pepper.
  5. Stir in low-carb marinara and simmer for 2–3 minutes.
  6. Transfer mixture to a casserole dish and spread into an even layer.
  7. Top with half of the mozzarella, add pepperoni slices, then sprinkle remaining mozzarella.
  8. Add extra pepperoni on top for crisp edges.
  9. Bake 18–20 minutes until bubbly and lightly browned.
  10. Cool slightly and serve warm.

Notes

For extra flavor, add olives or a sprinkle of Parmesan.
