  • 0.25 cup extra virgin olive oil
  • 3 cloves garlic minced
  • 2 lemons juiced and sliced
  • 0.25 cup fresh parsley chopped
  • 2 tbsp fresh oregano
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 0.25 tsp paprika
  • 2 tbsp butter melted

Method
 

  1. Preheat oven to 400°F (200°C) and lightly grease a baking dish with olive oil.
  2. Pat cod fillets completely dry with paper towels and season both sides with salt and pepper.
  3. In a small bowl, combine olive oil, minced garlic, lemon juice, parsley, oregano, and paprika to create herb mixture.
  4. Place cod fillets in prepared baking dish and brush generously with herb mixture, ensuring even coverage.
  5. Arrange lemon slices over and around the cod fillets for additional flavor and presentation.
  6. Drizzle melted butter over the top of each fillet for extra richness and browning.
  7. Bake for 12-15 minutes, or until fish flakes easily with a fork and internal temperature reaches 145°F.
  8. Remove from oven and let rest for 2-3 minutes before serving to allow juices to redistribute.
  9. Serve immediately with your favorite Mediterranean sides and enjoy the fresh, vibrant flavors.

Notes

For best results, choose fresh cod fillets and avoid overcooking. Fish is done when it flakes easily and reaches 145°F internal temperature. Serve with rice, roasted vegetables, or crusty bread.
