  • 4 cups cauliflower rice
  • 2 tbsp olive oil
  • 3 cloves garlic minced
  • 1 onion chopped
  • 1 cup cherry tomatoes halved
  • 0.5 cup black olives sliced
  • 0.5 cup cucumber diced
  • 0.5 tsp oregano
  • 0.5 tsp paprika
  • salt and pepper to taste
  • 0.25 cup parsley chopped
  • 0.33 cup feta cheese crumbled
  • 0.5 lemon juiced

Method
 

  1. Heat olive oil in a skillet over medium heat.
  2. Sauté onion until soft, then add garlic.
  3. Add cauliflower rice and cook until tender.
  4. Stir in tomatoes, olives, and cucumber.
  5. Season with spices and mix well.
  6. Finish with parsley, lemon juice, and feta.

Notes

Avoid overcooking cauliflower rice to prevent mushy texture.
