Method
- Preheat oven to 375°F (190°C) and grease a 9x13 inch baking dish.
- Brown ground beef in large skillet over medium-high heat, breaking apart as it cooks, about 6-8 minutes.
- Add diced onion and cook 3-4 minutes until translucent. Add garlic and cook 30 seconds.
- Stir in taco seasoning and cook 1-2 minutes. Add tomatoes, chiles, corn, and black beans.
- Pour in enchilada sauce and simmer 5-7 minutes until thickened. Remove from heat.
- Layer 2 tortillas in baking dish, followed by one-third meat mixture and one-third cheese.
- Repeat layering two more times: tortillas, meat, cheese to create three complete layers.
- Cover with foil and bake 25 minutes. Remove foil and bake 10-15 minutes until golden.
- Rest 10 minutes before cutting. Serve with desired toppings.
Notes
Can be assembled ahead and refrigerated overnight before baking. Freezes well for up to 3 months. Customize with jalapeños for heat or substitute black beans for meat for vegetarian version.
