Easy Mexican Lasagna

Layers of seasoned ground beef, cheese, and tortillas create this fusion comfort food perfect for family dinners and meal prep.

Ingredients
  

Meat Layer
  • 1 pound ground beef 80/20 blend preferred
  • 1 medium onion diced
  • 3 cloves garlic minced
  • 1 packet taco seasoning 1 oz
  • 1 can diced tomatoes 14.5 oz, drained
  • 1 can green chiles 4 oz, diced
  • 1 cup corn kernels frozen or canned, drained
  • 1 can black beans 15 oz, drained and rinsed
  • 1 cup enchilada sauce
Assembly
  • 8 large flour tortillas
  • 2 cups Mexican cheese blend shredded
  • 1 cup Monterey Jack cheese shredded
  • 1 cup sharp cheddar cheese shredded
Toppings
  • 1 cup sour cream
  • 2 medium tomatoes diced
  • 0.5 cup fresh cilantro chopped
  • 2 green onions sliced thin

Equipment

  • Large skillet
  • 9x13 inch baking dish
  • Wooden spoon
  • Aluminum foil

Method
 

  1. Preheat oven to 375°F (190°C) and grease a 9x13 inch baking dish.
  2. Brown ground beef in large skillet over medium-high heat, breaking apart as it cooks, about 6-8 minutes.
  3. Add diced onion and cook 3-4 minutes until translucent. Add garlic and cook 30 seconds.
  4. Stir in taco seasoning and cook 1-2 minutes. Add tomatoes, chiles, corn, and black beans.
  5. Pour in enchilada sauce and simmer 5-7 minutes until thickened. Remove from heat.
  6. Layer 2 tortillas in baking dish, followed by one-third meat mixture and one-third cheese.
  7. Repeat layering two more times: tortillas, meat, cheese to create three complete layers.
  8. Cover with foil and bake 25 minutes. Remove foil and bake 10-15 minutes until golden.
  9. Rest 10 minutes before cutting. Serve with desired toppings.

Notes

Can be assembled ahead and refrigerated overnight before baking. Freezes well for up to 3 months. Customize with jalapeños for heat or substitute black beans for meat for vegetarian version.
