Ingredients
  

  • 2 lb beef chuck cut into chunks
  • 0.25 cup all-purpose flour
  • 3 tbsp olive oil
  • 1 cup onion chopped
  • 3 cloves garlic minced
  • 4 carrots sliced
  • 4 potatoes cubed
  • 2 tbsp tomato paste
  • 1.5 cups red wine
  • 3.5 cups beef broth
  • 2 bay leaves
  • 1 tsp dried thyme
  • 1.5 tsp salt
  • 0.75 tsp black pepper

Equipment

  • Dutch oven or heavy pot
  • Wooden spoon
  • Chef's knife

Method
 

  1. Season and flour the beef.
  2. Brown beef in oil in batches; remove and set aside.
  3. Sauté onion and garlic in the same pot.
  4. Stir in tomato paste and cook briefly.
  5. Deglaze with red wine, scraping browned bits.
  6. Return beef, add broth, bay leaves, and thyme.
  7. Cover and simmer 90 minutes.
  8. Add carrots and potatoes; simmer 30 minutes more.
  9. Remove bay leaves, adjust seasoning, and serve.

Stew tastes even better the next day.
