  • 1 pound kielbasa or Polish sausage sliced into rounds
  • 1 medium head cabbage roughly chopped
  • 1 large onion sliced
  • 3 cloves garlic minced
  • 2 tbsp olive oil
  • 1 tsp paprika
  • 0.5 tsp caraway seeds optional
  • salt and black pepper to taste
  • 2 tbsp fresh parsley chopped
  • 1 tbsp butter optional

  • Cutting board
  • Sharp knife
  • Wooden spoon or spatula

Method
 

  1. Heat olive oil in a large skillet or wok over medium-high heat. Add sliced sausage and cook for 5-6 minutes, turning occasionally until browned and slightly caramelized on both sides.
  2. Remove sausage from pan and set aside, leaving the rendered fat in the skillet.
  3. Add sliced onions to the same pan and cook for 3-4 minutes until they begin to soften and become translucent.
  4. Add chopped cabbage to the pan, stirring to combine with onions. Cook for 8-10 minutes, stirring occasionally, until cabbage begins to wilt and develop some golden edges.
  5. Add minced garlic, paprika, and caraway seeds (if using) to the pan. Stir constantly for 1 minute until fragrant.
  6. Return the cooked sausage to the pan, mixing everything together. Season with salt and pepper to taste.
  7. Continue cooking for 2-3 minutes until everything is heated through and flavors are well combined.
  8. Remove from heat and stir in butter if using, followed by fresh chopped parsley.
  9. Taste and adjust seasonings as needed before serving immediately while hot.
  10. Serve in bowls or over your preferred grain, garnished with additional fresh parsley if desired.

Notes

This dish improves in flavor when stored overnight. Can be made ahead and reheated. Try adding bell peppers or mushrooms for extra vegetables.
