Ingredients
  

Sweet Potato Filling
  • 3 lb sweet potatoes peeled and cubed
  • 0.5 cup unsalted butter melted
  • 0.5 cup brown sugar
  • 0.25 cup granulated sugar
  • 0.5 cup milk
  • 2 eggs large
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • 0.25 tsp nutmeg
Topping
  • 3 cups mini marshmallows

Method
 

  1. Boil sweet potatoes until tender and mash.
  2. Mix mashed potatoes with remaining filling ingredients.
  3. Bake until heated through.
  4. Top with marshmallows and bake until golden.

Notes

Add marshmallows at the end to prevent melting too early.
