  • 4 bell peppers tops removed
  • 1 cup cooked rice
  • 1 tbsp olive oil
  • 1 onion chopped
  • 2 cloves garlic minced
  • 1 cup diced tomatoes
  • 0.5 cup corn
  • 0.5 cup black beans optional
  • 1 tsp paprika
  • 1 tsp oregano
  • 0.5 tsp cumin
  • salt and pepper to taste
  • 0.5 cup shredded cheese optional

Method
 

  1. Preheat oven to 350°F (175°C).
  2. Prepare peppers by removing tops and seeds.
  3. Cook onion and garlic in olive oil until soft.
  4. Add vegetables, spices, and cook mixture.
  5. Mix in cooked rice.
  6. Stuff peppers with mixture.
  7. Bake covered 25 minutes.
  8. Add cheese and bake uncovered 15 minutes.
