- Preheat oven to 375°F.
- Prepare peppers and place in baking dish.
- Cook onion and garlic in oil.
- Add vegetables and cook until tender.
- Mix in rice and seasonings.
- Stuff peppers with mixture.
- Bake covered 25 minutes, then uncover and bake 10–15 minutes more.
Notes
Add beans or lentils for extra protein.
