Main
  • 4 bell peppers
  • 1 cup cooked rice
  • 1 tbsp olive oil
  • 1 onion chopped
  • 2 cloves garlic minced
  • 1 zucchini diced
  • 1 cup tomatoes diced
  • 0.5 cup corn

Equipment

Method
 

  1. Preheat oven to 375°F.
  2. Prepare peppers and place in baking dish.
  3. Cook onion and garlic in oil.
  4. Add vegetables and cook until tender.
  5. Mix in rice and seasonings.
  6. Stuff peppers with mixture.
  7. Bake covered 25 minutes, then uncover and bake 10–15 minutes more.

Notes

Add beans or lentils for extra protein.
