Ingredients
  

Grilled Chicken
  • 2 chicken breasts boneless, skinless
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 0.5 tsp salt
  • 0.5 tsp black pepper
Salad
  • 6 cups mixed greens
  • 1 cup cherry tomatoes halved
  • 1 cucumber sliced
  • 0.5 red onion thinly sliced
  • 1 avocado sliced
Sweet Onion Dressing
  • 0.5 cup sweet onion finely chopped
  • 0.25 cup apple cider vinegar
  • 0.25 cup olive oil
  • 2 tbsp honey
  • 1 tbsp Dijon mustard
  • 0.25 tsp salt
  • 0.25 tsp black pepper

Equipment

  • Grill or grill pan
  • Mixing bowls
  • Blender or food processor

Method
 

  1. Season chicken with olive oil and spices.
  2. Grill chicken 5–6 minutes per side until cooked through. Rest and slice.
  3. Blend all dressing ingredients until smooth.
  4. Assemble greens and vegetables in bowls.
  5. Top with sliced chicken and drizzle with dressing.

Notes

Store dressing separately and add just before serving for best texture.
