- Slice hard-boiled eggs in half and remove yolks.
- Mash yolks with mayonnaise, chipotle mayo, lime juice, salt, and pepper.
- Fold in half of the charred corn.
- Spoon or pipe yolk mixture into egg whites.
- Top with remaining corn, cotija cheese, cilantro, and a sprinkle of paprika.
- Chill or serve immediately.
Notes
Add Tajín or jalapeño slices for extra heat and color.
