Ingredients
  

Main Ingredients
  • 6 hard-boiled eggs peeled
  • 0.25 cup mayonnaise
  • 1 tbsp chipotle mayo
  • 1 tsp lime juice
  • 0.5 cup corn kernels charred or roasted
  • 2 tbsp cotija cheese crumbled
  • 1 tbsp cilantro fresh, chopped
  • 0.25 tsp paprika
  • salt and pepper to taste

Method
 

  1. Slice hard-boiled eggs in half and remove yolks.
  2. Mash yolks with mayonnaise, chipotle mayo, lime juice, salt, and pepper.
  3. Fold in half of the charred corn.
  4. Spoon or pipe yolk mixture into egg whites.
  5. Top with remaining corn, cotija cheese, cilantro, and a sprinkle of paprika.
  6. Chill or serve immediately.

Notes

Add Tajín or jalapeño slices for extra heat and color.
