- Preheat oven to 400°F (200°C) and line a large baking sheet with parchment paper.
- Brown ground beef in a large skillet over medium-high heat, breaking it up as it cooks, about 6-8 minutes.
- Drain excess fat, add taco seasoning and water. Simmer 3-4 minutes until sauce thickens.
- Layer half the chips on prepared baking sheet, then add half the cheese and half the seasoned beef.
- Add remaining chips, then top with remaining cheese and beef, distributing evenly.
- Bake 8-12 minutes until cheese is melted and bubbly and chip edges are lightly golden.
- Remove from oven and immediately top with diced tomatoes, red onion, and cilantro.
- Add sour cream dollops, green onions, and jalapeños. Serve immediately with lime wedges.
Notes
For best results, use room temperature cheese for even melting. Build in layers for optimal coverage. Serve immediately for maximum crispness.
