Ingredients
  

Blondie Batter
  • 1 can chickpeas 15 oz, drained and rinsed
  • 0.5 cup almond butter
  • 0.33 cup maple syrup
  • 0.25 cup coconut sugar
  • 2 tbsp coconut oil melted
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 0.25 tsp salt
  • 0.5 cup dark chocolate chips

Equipment

  • Mixing bowl
  • 8x8 baking pan
  • Spatula

Method
 

  1. Preheat oven to 350°F (175°C) and line an 8x8 baking pan with parchment paper.
  2. Blend chickpeas in a food processor until completely smooth.
  3. Add almond butter, maple syrup, coconut sugar, coconut oil, and vanilla extract and blend until creamy.
  4. Add baking powder and salt and pulse briefly to combine.
  5. Transfer batter to a bowl and fold in chocolate chips.
  6. Spread batter evenly into the prepared pan.
  7. Bake for about 25 minutes until edges are lightly golden.
  8. Cool completely before slicing into bars.

Notes

For extra sweetness, add additional chocolate chips or a drizzle of melted chocolate on top.
