  • 10 flour tortillas 8–10 inch
  • 12 large eggs
  • 0.5 cup milk
  • 1 lb breakfast sausage pork or turkey
  • 1 cup shredded cheddar cheese
  • 1 red bell pepper diced
  • 1 small onion diced
  • 0.5 cup black beans optional
  • 1 tbsp olive oil or butter
  • salt and pepper to taste

  • Mixing bowls

  • Aluminum foil or parchment paper

Method
 

  1. Cook sausage in a skillet until browned and crumbly. Drain excess grease and set aside.
  2. Sauté diced onions and bell peppers in olive oil until softened. Combine with sausage.
  3. Whisk eggs, milk, salt, and pepper. Scramble over medium heat until softly set.
  4. Lay tortillas flat. Add sausage mix, eggs, black beans, and cheese evenly among tortillas.
  5. Roll tightly, folding sides inward first, then rolling from the bottom up.
  6. Let cool completely before wrapping in foil or parchment. Place in freezer bags and label.
  7. Freeze up to 3 months. Reheat in microwave 2–3 minutes or oven 25–30 minutes at 375°F (190°C).

Notes

Let burritos cool completely before freezing to prevent sogginess. For crisp texture, toast in skillet after reheating.
