- Cook sausage in a skillet until browned and crumbly. Drain excess grease and set aside.
- Sauté diced onions and bell peppers in olive oil until softened. Combine with sausage.
- Whisk eggs, milk, salt, and pepper. Scramble over medium heat until softly set.
- Lay tortillas flat. Add sausage mix, eggs, black beans, and cheese evenly among tortillas.
- Roll tightly, folding sides inward first, then rolling from the bottom up.
- Let cool completely before wrapping in foil or parchment. Place in freezer bags and label.
- Freeze up to 3 months. Reheat in microwave 2–3 minutes or oven 25–30 minutes at 375°F (190°C).
Notes
Let burritos cool completely before freezing to prevent sogginess. For crisp texture, toast in skillet after reheating.
