Ingredients
  

  • 8 large flour tortillas
  • 10 eggs
  • 1 lb breakfast sausage or bacon
  • 2 cups hash browns frozen, thawed
  • 1 cup bell peppers diced
  • 0.5 cup onion diced
  • 2 cups cheddar cheese shredded
  • 1 tbsp olive oil
  • 1 tsp salt or to taste
  • 0.5 tsp black pepper

Method
 

  1. Cook meat and drain excess grease.
  2. Cook potatoes until golden.
  3. Sauté vegetables until soft.
  4. Scramble eggs until just set.
