  • 6 chicken thighs bone-in
  • 2 tbsp olive oil
  • 1 onion diced
  • 3 cloves garlic minced
  • 2 carrots sliced
  • 250 g mushrooms
  • 1 cup red wine
  • 1 cup chicken broth
  • 2 tbsp tomato paste
  • 1 tsp thyme
  • 1 bay leaf

Method
 

  1. Preheat oven to 350°F (180°C).
  2. Sear seasoned chicken until golden and remove.
  3. Cook onions, garlic, carrots, and mushrooms.
  4. Add tomato paste and cook briefly.
  5. Deglaze with wine and add broth and herbs.
  6. Return chicken and bake covered for 45–60 minutes.
  7. Adjust sauce thickness and serve.

Notes

Use good quality wine for best flavor.
