Ingredients
  

  • 1.5 lb chicken thighs boneless or bone-in
  • 2 tbsp olive oil
  • 1 tbsp butter
  • 2 shallots finely chopped
  • 3 cloves garlic minced
  • 3 tbsp Dijon mustard
  • 1 tbsp whole-grain mustard
  • 1 cup chicken stock
  • 0.75 cup heavy cream
  • salt and black pepper to taste
  • fresh thyme for garnish

Equipment

  • Large skillet
  • Tongs
  • Wooden spoon

Method
 

  1. Season chicken with salt and pepper.
  2. Sear chicken in olive oil and butter until golden. Remove.
  3. Sauté shallots and garlic in the same pan.
  4. Stir in mustards and chicken stock.
  5. Return chicken and simmer until cooked through.
  6. Add cream, thyme, and adjust seasoning before serving.

Notes

Serve with mashed potatoes or crusty bread to soak up the sauce.
