- Season chicken with salt and pepper.
- Sear chicken in olive oil and butter until golden. Remove.
- Sauté shallots and garlic in the same pan.
- Stir in mustards and chicken stock.
- Return chicken and simmer until cooked through.
- Add cream, thyme, and adjust seasoning before serving.

Serve with mashed potatoes or crusty bread to soak up the sauce.
